This letter was written in 2008 and sent from Melbourne to Sydney. It was added to the archive of love letters in 2013.
FRESH PLUM DESERT CAKE
2 cups fresh tart plum halves
1/4 cup sugar
1/2 cup butter
1/2 tsp lemon extract or 2 tsp lemon juice
1 cup sugar
1 cup self raising flour
1 tsp baking powder
1/2 tsp fresh salt
1/2 tsp cinnamon
2 tbsp sugar mixed with 1 tsp cinnamon
Arrange halved & pitted fresh plums in bottom of greased baking pan (23 cm square or equivalent). Sprinkle daintily with 1/4 cup sugar.
In a bowl, cream yourself thoroughly and the butter, lemon and remaining sugar also, put in a different bowl. Add the eggs to the butter bowl, one at a time after cracking them on your forehead. Beat well after each is added, the eggs, yourself is optional. Sift flour into bowl while swaying hips from side to side but dont forget to pinch in the baking powder, salt & cinnamon. Stir until well blended while sipping whisky of the same nature.
Retrieve a wooden spoon from the bedroom to spoon the batter over plums. Sprinkle the topless with the sugar cinnamon mixture.
Bake in a moderate hot oven for about 45 minutes, plenty of time to clean up.. or get dirtier. Cake is ready when it pulls away from the sides like a disturbed fitted sheet. Serve warm or cool but keep yourself hot, topped with whipped cream or sour cream depending on your emotional state, Makes 6 to 9 servings. Rich and spicy like an indian sugamama.
